Hard-cheese disinfection

Hard cheese is one of the few foods that legislation allows to be directly disinfected with UV radiation during subsequent treatment. This effectively eliminates yeasts and moulds on the outer skin or wax layer before the cheese is cut into pieces.

Smear contamination of the fresh-cut surfaces by the slicer is thereby prevented, the product remains in a hygienically impeccable state, and keeping qualities are measurably extended.
